Say hello to the creamy, thick, and delicious Mtori soup made from green bananas and tender beef simmered in flavorful stock. Deeply satisfying, perfect for a cozy dinner, a quick after-work meal, or even a hearty midday snack. The blend of spices and smooth banana texture makes it both nourishing and delicious, especially when served with soft chapatis.

Step 1
Boil the Meat: In a large pot, add the chopped beef, whole garlic, and ginger. Pour in enough water to cover the meat (about 6 medium cups) and boil until the beef is tender and the water reduces to form a flavorful stock.
Step 2
Separate the Meat and Stock: Once cooked, remove the meat and set aside. Pour the remaining soup stock into another bowl and keep it for later use.
Step 3
Prepare the Base: In a clean pot, heat the vegetable oil and sauté the chopped onions until soft and fragrant.
Step 4
Add the Vegetables: Add the grated carrot and bell pepper. You can also add chopped chilies if you want the soup spicy. Stir gently and cook for a few minutes.

Add Seasonings: Add your preferred spices such as cumin, black pepper, seasoning cubes, and salt. Mix well.
Step 6
Add Bananas and Stock: Add the chopped green bananas (matoke) to the pot, followed by the beef stock. Stir and bring to a boil.

Cook Until Soft: Let everything cook until the bananas and vegetables are soft and the soup begins to thicken.

Blend the Soup: Transfer the cooked mixture to a blender or use an immersion blender to blend until smooth and creamy.
Step 9
Simmer with Meat: Pour the blended soup back into the pot, add the boiled beef, and let it simmer for 5–10 minutes so the flavors can combine.

Serve: Serve hot with chapati or your preferred side dish.
